Born in Córdoba, Argentina, he is a product of hometown club Instituto Atlético Central Córdoba’s youth system, and made his professional debut in the Primera B Nacional for Intituto at 17 years of age. He broke several club records during his maiden campaign: becoming the club’s youngest ever goalscorer; the first to score two hat-tricks in season; and the first to play in 38 consecutive games in the league in Argentina. His exploits in South America led to a move to Europe, as La Joya signed for Serie A club SSD Palermo in the summer of 2012. On 11 November 2012, the little Argentine opened his account in Italy with a brace, as Palermo won 2-0 against Sampdoria. In 93 outings for Le Aquile, the diminutive forward found the back of the net on 21 occasions and provided 16 assists, his performances led to several of Europe’s biggest clubs vying for his signature. On 4 June 2015, Serie A giants dished out €32 million to secure the services of La Joya on a five-year deal. He made his debut, in the Supercoppa Italiana, scoring in a 2-0 win over Lazio. His first three seasons at Juve saw him produce 78 goals and 30 assists over 183 appearances, firing La Vecchia Signora to three consecutive league and cup doubles. La Joya was voted in the Serie A Team of the Year in all three seasons for his marvellous performances. But then cracks began to appear in the Bianconeri love affair with the addition of Cristiano Ronaldo in the 2018/19 season. Despite winning two more Serie A titles to add to the previous three, the once indispensable La Joya had slowly become surplus to requirements. In the summer of 2022 Juventus announced they would not be offering Dybala a new contract, leaving the South American heartbroken and a free agent. Juve's loss was AS Roma's gain as they snapped up the mercurial striker on a free.
